Ingredients:

• 1 cup dry beans for every quart jar

• 1 tsp salt for every quart jar

• water


Instructions:

1. Prepare Your Jars: Ensure your canning jars are clean and sterilized. For this recipe, we’ll use quart-sized jars.

2. Fill Jars with Beans: Begin by filling each quart jar with 1 cup of dry beans. You can use your favorite bean variety – whether it’s black beans, kidney beans, or pinto beans.

3. Add Salt: For each quart jar, add 1 teaspoon of salt. This enhances the flavor of the beans and acts as a preservative.

4. Add Water: Carefully pour water into each jar, leaving about a 1-inch headspace at the top. This allows room for expansion during canning. The beans will triple in size during processing.

5. Debubble: Use a debubbling tool or a plastic utensil to remove any air bubbles trapped in the jar. This ensures even canning.

6. Seal the Jars: Place the lids on the jars and tighten them to fingertip tightness. This means closing them firmly but not too tightly.

7. Pressure Canning: Process the filled jars in a pressure canner according to the appropriate pressure for your location. Typically, this involves processing at 10 lbs of pressure. Consult your canner’s manual for specific instructions. Different altitude's have different requirements.

8. Processing Time: Process the jars for 90 minutes. This duration ensures that the beans are safely preserved and ready for long-term storage.
