HAMBURGER BUNS

You will never buy hamburger buns at the store again after trying this recipe.

3 cups all-purpose flour

3 Tbsp granulated sugar

2 1/4 tsp active dry yeast

1 1/2 tsp salt

1 cup warm water

1 large egg, at room temperature

3 Tbsp butter, melted

1 egg

 

1 Tbsp water (for egg wash)

Sesame seeds (optional)

 

Whisk together flour, sugar, yeast, and salt. Pour in water, egg and butter. With the dough hook attached, mix in a stand mixer for 5 minutes, or until dough is smooth and elastic.

 

Transfer to a bowl coated in olive oil. Place a towel over the bowl, and let rise for about 90 minutes, or until doubled in size. I like to use my oven with only the light turned on as a proofer.

 

Punch dough down, and split into 10 equal portions. I do this by pressing the dough into a circle on a lightly floured surface, and cutting them into pie slices with a pizza wheel.

 

Roll each individual piece into a ball, and place about 2 inches apart on a parchment lined baking sheet. Cover with a tea towel and let rise in oven again until doubled to tripled in size (about an hour).

 

Remove buns and preheat oven to 375 degrees Fahrenheit. Mix egg and water together, and lightly brush the surface of each bun with the egg wash. If you’d like, sprinkle sesame seeds onto each one. Bake in oven for 15 minutes, or until golden brown. Cool completely before slicing.
